Kale salad is a dish that’s easy to prepare and doesn’t take any time at all. It’s a great choice for days when you’re in a hurry!

Since it’s a super fresh recipe, we recommend making it in summer – your guests are sure to love it!

How to make kale salad:

  1. Finely chop all the salad ingredients, except for the raspberries.
  2. Put the ingredients in a bowl and set aside.
  3. In a blender, add all the dressing ingredients and blend until creamy. Add 2 or 3 tablespoons of water if necessary.
  4. Pour the dressing over the salad and toss to mix. Add the raspberries to the top of the salad. Serve.

Ingredients

For the salad:

  • 7 oz. kale
  • One 15-oz. can or jar of lentils
  • 1 cup raspberries
  • 2 cucumbers, finely diced
  • ½ cup spring onion
  • ½ cup chives, finely chopped

 For the dressing:

  • Juice of two lemons
  • 2 cloves garlic
  • 1 small shallot
  • ½ cup Extra Virgin Olive Oil from Spain
  • 2 tbsp rice vinegar
  • 1 tbsp chives
  • ¼ cup walnuts and cashews
  • 1 cup spinach leaves
  • 1 cup basil leaves
  • Salt
  • ⅓ cup cured Manchego cheese, grated
