Quail 'lollipops' with orange and cinnamon marinade recipe

Preparation:

  1. Slice the red onions, carrots and leeks and brown in Extra Virgin Olive Oil from Spain.
  2. When soft, add the coriander seeds, cinnamon stick, orange peel and juice and, lastly, the sherry vinegar.
  3. Leave to cook over a low heat.
  4. Salt and flour the quail drumsticks, then brown them in Extra Virgin Olive Oil from Spain.
  5. Stir in the orange marinade and leave to cook for about 10 minutes over a low heat.
  6. To serve, place the quail 'lollipops' on small plates and spoon the orange and cinnamon marinade over the top.

  • 500ml Extra Virgin Olive Oil from Spain
  • 250ml sherry vinegar
  • 2 orange peels
  • Juice from 2 oranges
  • 1 cinnamon stick
  • 200g red onions
  • 100g carrots
  • 100g leeks
  • 15 coriander seeds
