Seasonal fruit salad with raspberry vinaigrette recipe

Preparation:

For the salad:

  1. Fill a mould with the mixed lettuce.
  2. Arrange a few pieces of diced mango, some blackberries and raspberries on top of the lettuce, strategically spreading the forest fruits through the salad and on the plate for decoration.
  3. Cut the watermelon and the pineapple into large triangles and place them around the salad.

For the vinaigrette:

Pour the Extra Virgin Olive Oil from Spain into a bowl, add the vinegar and some raspberries and blend to a smooth consistency. Season with salt and stir again.

To serve:

Once the vinaigrette is ready, pour over the salad.
