Professor Miguel Ángel Martínez, one of the global leaders in the study of the benefits of a Mediterranean Diet rich in vegetables and olive oil, analyzes the virtues of this diet in preventing some of the most common diseases at the Menus of Change® conference. This conference is held every year with the aim of providing the American restaurant industry with guidelines for achieving a healthier, more varied diet. It is an initiative of the Culinary Institute of America, in collaboration with the Harvard T.H. Chan School of Public Health. Chef Seamus Mullen contributed his experiences regarding a diet that is not only healthy, but also flavorful, varied, and easy to adopt in any part of the world. Mullen prepared several distinctly Mediterranean dishes, with vegetables and Spanish olive oils as the major players: ratatouille, zucchini noodles, and fennel and artichoke salad.
